Beer is made from hops.

I agree that historians generally differentiate beer by the fact that it is made with hops, but by Jefferson's period the difference between beer and ale was starting to get more confused because the British and Americans had started to put hops in everything but still call some things ale. In our own day the difference for brewers is the type of yeast that is used. I think that this article has some mistakes on the techniques of brewing and the different recipes that were available to Jefferson.
